Cupcake to cake ~ chocolate dipped salted caramel

I got to translate one of my favorite cupcake flavors to a little birthday cake over the weekend.  
The cupcake ~ chocolate salted caramel cake, topped with caramel frosting, dipped in chocolate and drizzled with caramel and finished off with pinches of sea salt.

Dark Chocolate Pomegranate Pepita Cake

I love (really really love) pomegranates.  I love how they taste and how the seeds look like little shiny jewels.  We have a pomegranate tree in our yard and my daughter and I wait all year for the poms to start falling from the tree.  While they are in season, I'd have pomegranate cupcakes on our menu every week, if it were up to me, but I'm not sure everyone loves them as much as Opal & I do.  Before the season ends, I had to make something special with them.
I started with a dark chocolate pomegranate pepita bark, which was super simple to make and only required 3 ingredients...dark chocolate, pomegranate seeds and pepitas (pumpkin seeds).
 

I simply melted chopped dark chocolate over a water bath and then spread it on a sheet pan over parchement paper.  Then I sprinkled on the pom & pepitas and let it cool.
The sweetness of the chocolate was a really yummy balance with the tartness of the pom seeds and hint of saltiness from the pepitas.  
While the bark was cooling, I made a 4" chocolate cake, filled with fudge and frosted with chocolate buttercream...
...and then topped it with the bark.

bundt cakes & cakes for Greta Bean

 

Have you visited the cyber shop Greta Bean?  If not, you must go view all the beautiful goodies for your home.  The shop owner, Jen Curtis, visits flea markets, trade shows and pours over catalogs to bring you lovely, unique finds.

We made some cakes and bundt cakes to showcase some of the treasures (cake stands, tabletop, serveware, etc.) that you'll find at Greta Bean.  The shoot was photographed by Jose Villa and styled by Flower Wild.

Enjoy Cupcakes will be opening soon in Santa Barbara

 

Coming summer of 2013, Enjoy Cupcakes will have a second home in Santa Barbara.

We are ecstatic to share that Enjoy Cupcakes will be one of 17 independent merchants within the Santa Barbara Public Market (similar to Pike's Place in Seattle and the Ferry Building in San Francisco), located on the corner of West Chapala & Victoria streets.

The project is currently under constuction, but here is a rendering of what's to come...

Here’s a bit about the Santa Barbara Public Market from their facebook page … The Santa Barbara Public Market will be an important part of urban life in downtown Santa Barbara and a central place of exchange for commerce and community. The 15,300 square foot market will be comprised of artisan food and wine merchants showcasing Santa Barbara region farmers, wine makers and other providers of locally produced food. The very best regional and seasonal foods will be sold, including meats, poultry, seafood, cheese, fresh produce, flowers, bread and baked goods, olive oils, and other specialty items like chocolate and ice cream. An additional 8,000 square feet of commercial/retail space will complement the Public Market, bringing the total commercial/retail square footage to 23,300 square feet. The Santa Barbara Public Market is part of a mixed-use development that includes 37 residential condominium units.

Enjoy Cupcakes’ original location, nestled within Saarloos and Sons tasting “House”, will remain the same, continuing to offer the fun unique experience of pairing cupcakes with wine.
