Cupcake "SAMMIES" / sandwich

Kara & I played around in the kitchen this morning and made some cupcake sammies...

 

PB&J...vanilla cake, layered with blackberry preserves & blackberries, topped with peanut butter frosting

Rocky Road...chocolate cake, layered with marshmallow mousse & chocolate sauce, topped with chocolate frosting, walnuts, marshmallow & chocolate

Strawberries & Cream...vanilla cake, filled with pastry cream, layered with vanilla frosting & strawberries, topped with a vanilla frosting dollop

Chocolate Blackberry...chocolate cake, filled with dark chocolate fudge, layered with blackberry frosting & blackberries, topped with a blackberry & frosting dollop

They all look awesome, but the strawberry one looks the best :)!
