goodbye Christmas cupcakes...

I asked our facebook friends what cupcake flavor they'd like us to offer over Christmas weekend and the overwhelming response was, "Peppermint Bark".  I'm typically resistant to incorporate white chocolate into the cupcakes (only because I just don't really care for it), but if that's what our customers want, that's what they get!  Despite my resistance to white chocolate, I love this cupcake...I made a white chocolate mascarpone mousse for the filling and the mascarpone & white choc. together is divine!

Chocolate peppermint cake, filled with white chocolate mascarpone mousse, topped with vanilla frosting & peppermint bark

And while we were on vacation last week, we kept dreaming up new cupcake flavors...

Raspberry Cheesecake...Vanilla graham cracker crumb cake, filled with New York style cheesecake, topped with sweet cream cheese frosting & raspberry sauce.

Pumelo Chardonnay...Chardonnay cake, filled with pumelo curd, topped with pumelo frosting, pumelo honey glaze and pumelo zest.  What is pumelo?  It's the ancestor to our common grapefruit.  It's a beautiful fruit with a pink inside and green exterior.
